Community Spotlight - San Juan Bread maker extraordinaire, Karlo Evaristo

I have been anxiously awaiting the opening of Mayfield, a new restaurant in downtown San Juan (more on that in a future post). One day the owner posted an Instagram story about bread he was trying out in San Juan. A business called 61hundredbread run by Chef, Karlo Evaristo. I gave it try and well, I'm hooked. Unbeknownst to Karlo, he is now my bread guy. When it comes to food, I don't have a professional palette, I just know what I like....and I like this man's bread. (For an actual food critic's review read: The Best thing I ate this week). I've tried both the sourdough and rosemary foccacia bread. Both are delicious and I encourage all San Juanians to try it. The first time I brought home the foccacia my family and I ate it for dinner, not as a side dish, the main course. It was that good. Between the OC register article and word of mouth 61hundredbread has seemed to explode. Pretty impressive considering Karlo just started baking naturally-leavened  bread six months ago! Maybe its the flour he mills himself, maybe it's knowing I am eating homemade artisan bread, maybe its the satisfaction of supporting a small business owner obsessed with achieving the perfect loaf, perhaps it's all three. All I know is you better get yourself a bread guy before this one's unavailable.
